Onion confit is a staple of French gastronomy. This particular confit is made with white wine from Château Virant. Ideal to accompany foie gras during the holidays, this onion confit is an explosion of delicate flavors. We start this confit by cooking the onions. When cooked, the onion reveals a slight sweetness. Next, we deglaze the pan with the white wine from the estate, caramelizing the juices released during cooking. Finally, the mixture simmers until the liquid is completely absorbed,leaving an onion jam with a delicate and slightly sweet texture.

Désolé, pas essayé encore mais avec du foie gras de canard (ou d'oie) frais poêlé en mini-cocotte en fonte et un œuf cela doit être excellent = une "tuerie" comme on dit.
