Broken olives are a Provencal specialty made from green olives. These olives have the particularity of being "broken" before the de-bittering of the olive (passage of the olive in a soda solution to remove the natural bitterness of the fruit). The olives are then immersed in a brine composed of fennel and various Provencal herbs (thyme, bay leaf...).
In the mouth, the olives have a firm flesh and a pronounced taste of fennel.
