Our green olive spread is made of a puree of Lucques olives. This olive with its aromatic flesh is picked green before the natural rise of oil in the fruit. The resulting bitterness confers an aromatic freshness to the olives.
The flesh of the fruit is then crushed to create a smooth puree that can be enjoyed plain or as a compliment to Mediterranean dishes.
