At Château Virant, we are fortunate to cultivate an exceptional Picholine orchard, rooted in our Provencal terroir. This emblematic variety from the South of France, with its lively, robust and elegant character, represents a genuine living heritage that we are committed to fully exploiting. It is in this spirit of transmission and excellence that we have chosen to produce a single-varietal extra virgin olive oil, dedicated to Picholine. Its intense aromatic profile, with notes of fine herbs, green fruit and fresh pepper with characteristic plum aromas, makes it an oil of character, rich and singular, that will appeal to the most demanding connoisseurs. This oil is much more than a product: it's the pure expression of local know-how, a preserved terroir, and a unique variety that deserves to be highlighted. Picholine stands out not only for the richness of its oil, but also for its rare versatility. In fact, it is one of the few French varieties traditionally used for both oil and table use. Harvested earlier, it produces a crunchy, green and flavorful olive, much appreciated as an aperitif or in Mediterranean dishes. This dual aptitude makes it a highly valuable variety, which we are committed to cultivating in all its forms.

Area Of the 46 hectares of olive trees on the property, 5 hectares are planted with the Picholine variety.
Location Our Picholine orchards are located in the communes of Lançon de Provence, La Fare-les-Oliviers and Velaux, in the Bouches-du-Rhône region.
Planting density On average, we have 333 olive trees per hectare.
Floors The soil in which the orchards are planted is clay-limestone
Date of harvest Picholine is harvested from mid-October to mid-November for its intense fruitiness.
Type of crop The entire estate is certified High Environmental Value Level 3 (HVE3), the most demanding sustainable agriculture there is.
Oliveraie Picholine olive oil is made exclusively from the estate's own olive trees.
Age of the olive trees The oldest are from the 1956 frost, the youngest are already 15 years old.
Sorting All of our olives are visually selected, and the leaves are carefully removed and washed.
Performance The yields of our trees, oscillate according to the years between 4 and 8 t/ha.

Type of harvest The olives are harvested with vibrating combs. The methods of harvesting by vibration of the trees are prohibited because they damage the rooting of the trees.
