At Château Virant, we are fortunate to cultivate an exceptional Picholine orchard, rooted in our Provencal terroir. This emblematic variety from the South of France, with its lively, robust and elegant character, represents a genuine living heritage that we are committed to fully exploiting.

It is in this spirit of transmission and excellence that we have chosen to produce a single-varietal extra virgin olive oil, dedicated to Picholine. Its intense aromatic profile, with notes of fine herbs, green fruit and fresh pepper with characteristic plum aromas, makes it an oil of character, rich and singular, that will appeal to the most demanding connoisseurs.

This oil is much more than a product: it's the pure expression of local know-how, a preserved terroir, and a unique variety that deserves to be highlighted.

Picholine stands out not only for the richness of its oil, but also for its rare versatility. In fact, it is one of the few French varieties traditionally used for both oil and table use. Harvested earlier, it produces a crunchy, green and flavorful olive, much appreciated as an aperitif or in Mediterranean dishes.

This dual aptitude makes it a highly valuable variety, which we are committed to cultivating in all its forms.

Pairings

A flavor enhancer, it brings out the freshness of early vegetables. It is also ideal with grilled meat or fish.

Environmental distinction

Château Virant holds HVE 3 certification, the highest level of environmental certification for agricultural operations awarded by the French government. It opens up a privileged path for the development of sustainable production and consumption, and certifies rigorous management of natural resources.

Awards

For our very first cuvée, vintage 2024, our Picholine extra virgin olive oil was presented for the first time at the Concours Général Agricole de Paris. We are proud to announce that it was awarded a silver medal, in recognition of the quality of our work and the exceptional potential of this single variety.

This distinction rewards our demanding approach, which respects both fruit and terroir, and encourages us to continue along this path of excellence.

Origin

All our olive oils carry the Huile d'Olive de France label. This guarantees that they all come from our own orchards, always close to Château Virant, in the heart of Provence.

How it's made

Before harvesting, we carry out ripeness tests in the laboratory to ensure quintessential organoleptic characteristics. Then we harvest the plots planted exclusively with the Aglandau variety. We press the olives immediately to preserve as much of the olive oil's natural organoleptic and physiological properties as possible. The sooner the olives are pressed after harvesting, the better the quality of the oil.

Once pressed, our oils are stored in vats and sold within a year. We are proud to display the vintage.

Our olive oils are bottled according to orders, to guarantee optimum conservation in our vats, where the oil is kept in an air-conditioned atmosphere under nitrogen.

Storage

For optimum preservation, store your oils away from light and heat. By observing these precautions, the taste qualities of your oil will not be altered, and you'll maximize its potential even after the best-before date.

All our olive oils have been recognized by the Collège Culinaire de France since 2018. This institution, created by internationally renowned chefs such as Alain Ducasse, Thierry Marx, Joël Robuchon and Yannick Alléno, helps promote French gastronomy around the world. With its rigorously selected members, the Collège Culinaire de France promotes the heritage and future of France's artisanal culinary heritage.

Area Of the 46 hectares of olive trees on the property, 20 hectares are planted with the Aglandau variety.
Location Our Picholine orchards are located in the communes of Lançon de Provence, La Fare-les-Oliviers and Velaux, in the Bouches-du-Rhône region.
Planting density We do not plant more than 333 olive trees per hectare on average in order to allow our trees to flourish.
Floors The Terroir of Château Virant is clay-limestone.
Date of harvest Picholine is harvested from mid-October to mid-November for its intense fruitiness.
Type of crop The entire estate is certified High Environmental Value Level 3 (HVE3), the most demanding sustainable agriculture there is.
Oliveraie Picholine olive oil is made exclusively from the estate's own olive trees.
Age of the olive trees The oldest olive trees are from the 1956 frost, the youngest are already 15 years old.
Sorting The olives are visually selected, thinned out and washed before crushing.
Performance Our average yield is 6 t/ha.

Type of harvest The olives are harvested with vibrating combs. The methods of harvesting by vibration of the trees are prohibited because they damage the rooting of the trees.
