Salonenque olive oil comes from a very Provencal variety, monovarietal. This means that it is obtained from the crushing of a single variety of olive: the Salonenque. It is the queen variety in the country of Salon-de-Provence because it has been present there for hundreds of years.
This exclusivity in the choice of the variety gives this oil a robe with slightly golden reflections. On the palate, it is an oil of light intensity and balance, with a delicate fruitiness and aromas of artichokes, hazelnuts and fresh apples.
Its bitterness and ardency are very light but sufficient to ensure the good conservation of this precious liquid.
Salonenque olive oil is ideal for lovers of light green fruitiness and for entering the world of premium olive oils. Indeed, many are discovering the subtle flavors and aromas of olive oil and using them in the elaboration of original recipes. Starting with a mild oil and evolving towards fiery fruity flavors is the assurance of discovering step by step the aromatic palette of olive oils.

Type of harvest | The Salonenque trees are selected from the historical orchard of Château Virant. The olives are harvested by hand or with vibrating combs. The olives fall into nets which are emptied into paloxes and transported to the mill. |
